I never realized that when I got older that I would spend a lot of my time figuring out what to eat and cook for dinner. I love to cook, but coming up with ideas is harder than I thought. Thank goodness for cookbooks! Below are the seven (7) most repeated meals, with recipes, that Christian and I cook regularly.
- Brown Sugar Meatloaf
- 1 pound ground beef
- 1 TBSP Brown Sugar
- 1 Egg
- Ketchup
- 1 TBSP Worcestershire sauce
- 1 Cup Bread Crumbs
- Directions: Preheat oven to 350 degrees F. In a medium bowl, add ground beef, egg and bread crumbs. Mix together and place in a lightly greased loaf pan. In a separate small bowl, mix together ketchup, brown sugar and Worcestershire sauce. Pour over meatloaf. Cook uncovered for 60 minutes.
- **I like to mix in the sauce (ketchup, brown sugar and Worcestershire sauce) in with the meatloaf and then add some on top as well.
- Tacos
- I feel like I do not need to put a recipe for this one, since it is very easy to prepare.
- Some toppings we like are sour cream, salsa, guacamole, shredded cheese, taco sauce and shredded lettuce.
- I prefer soft shell, while Christian likes both.
- Steak with veggies and potatoes
- Christian is the steak cooker, but this is how he seasons it:
- Pat both side dry with a paper towel
- Drizzle and rub in olive oil on both sides
- Season with salt, pepper and steak seasoning on both sides
- Let steaks rest for about 5 to 10 minutes before cooking
- We usually grill asparagus and potatoes to go with it.
- Christian is the steak cooker, but this is how he seasons it:
- Cajun Shrimp Pasta with Garlic Bread
- Garlic bread, we just buy frozen and cook in the air fryer to get it good and crispy.
- Pasta of your choice
- Shrimp, 1 bag
- 1 TBSP olive oil
- 16 oz of heavy cream
- Parmesan cheese, 1 block shredded
- Cajun seasoning of your choice (we use Slap Yo Mama)
- Directions: Cook pasta and garlic bread as directed on packaging. Pat dry shrimp and place in a medium bowl. Sprinkle cajun seasoning on shrimp and toss to coat. In a large skillet, heat up 1 TBSP olive oil. Cook shrimp, about 1-3 minutes on each side. Once shrimp is cooked, remove from skillet. In the same skillet, pour in heavy cream, more cajun seasoning and slowly add in parmesan cheese until sauce thickens. Once sauce is thick, pour over pasta and shrimp. Serve and enjoy!
- Hawaiian Pork Chops with Rice
- 4 pork chops (2 lbs)
- 1/4 tsp salt and pepper
- 1/2 cup all-purpose flour
- 2 TBSP olive oil
- 1 can, 8oz, crushed pineapple, undrained
- 1/2 cup ketchup
- 1/4 cup distilled white vinegar
- 2 TBSP light brown sugar
- 1 TBSP soy sauce
- 1 TBSP worcestershire sauce
- Rice of choosing (we use white rice)
- Directions: Heat oil in large skillet. Season pork chops on both sides with salt and pepper. Coat both sides in flour. Brown pork chops about 2-3 minutes per side. In a medium bowl, mix together crushed pineapple, ketchup, vinegar, brown sugar, soy sauce and worcestershire sauce. Pour over pork chops, cook, covered over low heat for about 30 minutes or until chops are tender. Add a little water if necessary if sauce becomes too thick. Serve with rice and a veggie if desired.

These are the most repeated meals Christian and I eat throughout the week. Every now and then, we do order out, go out to dinner or order a pizza. I hope you like these meals, the cajun pasta, brown sugar meatloaf and hawaiian pork chops, as much as we do if you try them!
